How has One8Nine’s whisky been aged?
All our releases are barrel aged. Cask whisky aging is a delicate and complex process that takes place over time as the whisky interacts with the wood cask, allowing it to develop rich and intricate flavours. The aging process is influenced by several factors, including the type of cask, the climate in which the cask is stored, and the length of time the whisky spends in the barrel. Over time, the whisky's flavors evolve and deepen, becoming more complex as it absorbs compounds from the wood. A longer aging process tends to mellow the whisky, softening harsh flavours and integrating the various components into a smoother, more harmonious profile.
When should I drink One8Nine releases?

How do we select our casks?
Each cask is individually chosen with a discerning eye, selecting only the finest expressions that embody the essence of craftsmanship and heritage; those with unique character, extraordinary aging potential, and the power to tell a story. These casks are meticulously evaluated for their balance, complexity, and depth, with each bottling offering a rare glimpse into a moment in time. One8Nine’s commitment to quality ensures that only the most distinctive whiskies, are chosen to carry their name—whiskies that stand apart, evoking a legacy of excellence and individuality.
How do we ensure provenance?
Verified sourcing enables us to trace the journey of the cask from distillation to bottling, all of which is fully documented. These detailed records are essential to ensure the whisky's authenticity and guarantee its traceability from cask to bottle. Every cask that is selected undergoes a thorough evaluation. One8Nine documents key information such as age, cask type (e.g., sherry, bourbon, port), and previous ownership. This meticulous documentation allows the bottler to establish a clear and accurate timeline for the whisky's maturation. We also attend all bottlings to ensure provenance is maintained until the end of the process.
Where do we source from?
One8Nine sources its casks from a select and small network of industry professionals. Partners that we have known for years who are renowned in the industry for their excellence in production and provenance. These handpicked casks are sourced with the utmost care, ensuring that every drop reflects a unique narrative, imbued with the craftsmanship of its origin. By embracing both the established and the obscure, we at One8Nine, crafts an ever-evolving collection, each bottle an exclusive journey through time and terroir.
What does it mean to be an independent bottler?
An independent bottler refers to a company or individual that purchases casks of whisky from distilleries, brokers or warehouses and then bottles and sells that whisky under their own label. In 189’s case we only work with trusted partners to ensure perfect provenance. Independent bottlers are distinct from the distilleries themselves, which typically bottle and sell their own products under their own brand name.
Why are we called One8Nine?
One8Nine was thoughtfully chosen as a tribute to the number of bottles meticulously crafted from our inaugural cask release; Benriach 27 Year Old ‘First Light’. Our name is a symbolic reflection of the journey we began. This distinctive number represents both a milestone and a celebration of the rare and exceptional spirit captured in those first bottles—each one a testament to our commitment to craftsmanship, heritage, and the timeless allure of whisky.
